The owners began the business in 2011 with a vision “to provide the community with the best food options available. Fresh, local and organic was our motto.”

The owners chose the name “Evolution” because they strongly feel that, "what we choose to eat plays an enormous role in the sustainability of our planet, the health and well-being of ourselves, and also the peace and serenity of other non-human animals that we share our planet with.”
